Fast proofing for soft, no-wet and no-peel-off baking doughs
Injection steam generator, uniform air distribution inside the proofer and steadiness of humidity and temperature values, allows to oven doughs to remain soft, no-wet and with no peel-off effect.
Easy to use and to program
The room integrates an electronic thermostat/humidistat with an intuitive programming keyboard for steady monitoring of the product proofing process. Available on request, the next generation touchscreen display also allows to set customized programs based on your recipes.
Easy maintenance
The injection steam generator blows 110°C steam directly inside ventilation system, drastically cutting down air condensation on inside walls. Also limestone maintenance is reduced, due to a specific kind of water check.
